A rich and meaty vegan bolognese made with finely chopped mushrooms and walnuts simmered in marinara sauce, served over pasta.
Pulse mushrooms and walnuts in a food processor until finely chopped (do not puree).
Heat olive oil in a large pot. Sauté diced onion and garlic for 3-4 minutes.
Add mushroom-walnut mixture and cook for 8-10 minutes until browned.
Pour in marinara sauce, add oregano and red pepper flakes. Simmer for 20 minutes.
Cook pasta according to package directions. Drain and reserve some pasta water.
Toss pasta with bolognese sauce, adding pasta water to loosen if needed.
Serve with nutritional yeast and fresh basil.
