Saute sliced mushrooms in butter until golden. Set aside.
Saute 1 diced onion in olive oil. Add Arborio rice, stir 1 minute.
Add white wine, stir until absorbed.
Add warm vegetable broth 1 ladle at a time, stirring frequently, for 18-20 minutes.
Stir in mushrooms, spinach, and parmesan.
Season and serve.
