Preheat oven to 190°C (375°F).
Sauté diced zucchini, bell pepper, mushrooms, and spinach in olive oil for 6 minutes.
Mix ricotta with one beaten egg, salt, pepper, and Italian herbs.
Spread a thin layer of marinara in a baking dish. Layer lasagna sheets, ricotta mixture, vegetables, marinara, and mozzarella.
Repeat layers 3 times, finishing with marinara and mozzarella on top.
Cover with foil and bake for 35 minutes. Remove foil and bake 10 more minutes.
Let rest for 15 minutes before slicing.
