Whisk together the eggs, dashi, soy sauce, mirin, and sugar.
Heat a rectangular pan or small skillet with oil.
Pour a thin layer of egg mixture and cook until just set.
Roll the egg to one side of the pan.
Add another thin layer and roll again.
Repeat until all egg mixture is used.
Slice and serve with pickled ginger.
