Drain and rinse young green jackfruit. Shred with a fork or your hands.
Heat olive oil in a large skillet. Sauté onion and garlic for 3 minutes.
Add shredded jackfruit, cumin, smoked paprika, chili powder, and a pinch of salt.
Pour in a splash of lime juice and water. Cover and cook for 20 minutes, stirring occasionally.
Uncover and increase heat to crisp the jackfruit edges for 5 minutes.
Warm tortillas and fill with jackfruit, shredded cabbage, avocado, and lime wedges.
