Add pitted dates, walnuts, and cacao powder to a food processor.
Pulse until mixture is finely chopped and begins to stick together.
Add a pinch of salt and a splash of vanilla extract. Pulse to combine.
Roll mixture into 12-14 small balls (about 1 tablespoon each).
Roll each ball in shredded coconut to coat.
Refrigerate for at least 30 minutes before serving. Store in fridge for up to 1 week.
